En el restaurante Etxebarri, Bittor Arginzoniz utiliza cepas de vid y sarmiento para crear las brasas. Estas\u00a0aportan aromas que casan muy bien con la carne roja.<\/li>\n<li><strong>Coloca la chuleta en la parrilla.<\/strong>\u00a0La llama tiene que acariciar suavemente la carne por debajo, as\u00ed pues col\u00f3cala justo encima. Para que la chuleta no pierda jugosidad la carne se tiene que sellar r\u00e1pidamente.<\/li>\n<li>Mientras la chuleta est\u00e1 en la parrilla <strong>s\u00e1lala por la cara cruda.<\/strong> Siempre se sala en crudo, la costra que forma la carne en contacto con la llama dificulta la penetraci\u00f3n de la sal.\u00a0D\u00e9jala asar en esta posici\u00f3n durante 10 minutos.<\/li>\n<li>Para terminar, sacude la sal sobrante y <strong>dale la vuelta a la chuleta<\/strong>.
